Gator Po-Boy Sandwich
Ingredients

½ pound cubed gator meat

½ pound shrimp

2 teaspoon kosher salt, pepper, Cajun seasoning mixed

1 ½ tablespoons garlic, chopped

½ tablespoon of parsley

1 pint 2% milk
-
3 cups barbecue chips, crushed

1 cup all-purpose flour
-
1 teaspoon salt1 teaspoon pepper

1 loaf French bread

Remoulade sauce (see recipe)

8 oz. shredded lettuce1 tomato, sliced

½ cup sliced pickles
-
½ cup remoulade sauce
Method:
In a bowl, combine the shrimp, gator, and half of the seasoning mixture, garlic, parsley. Pour milk in a separate bowl and mix in the remainder of the seasoning mixture. In a third bowl, combine flour, chips, salt and pepper. Dredge the gator and shrimp in the milk mixture. Then, toss gator and shrimp in the flour and chips mixture. Next, place the gator and shrimp on a sheet pan and back at 375-degrees for 25 minutes. Slice open the French bread and spread each slice with remoulade sauce. Top with lettuce, gator, shrimp, tomatoes, and pickles and serve.
Remoulade Sauce

1/3 cup mayo

½ tablespoon garlic, chopped

1 tablespoon Dijon mustard

1 ½ tablespoons hot sauce

1 tablespoon red onion
-
3 tablespoons celery, chopped
-
1 tablespoon Worchester sauce
-
2 tablespoons salt
-
2 tablespoons pepper
-
1 tablespoon Cajun seasoning
-
2 tablespoons pickles, diced
Method:
Combine all ingredients into a bowl and whisk together.
